I would stay at a downtown Memphis hotel. You can walk to Beale St and then have the hotel arrange a tour of Graceland, which is ~8 miles from downtown. We stayed at Hilton Garden in 2 blocks from Peabody hotel and a few more blocks from Beale St. We're not avid Elvis fans, so didn't feel the need to visit his house. I enjoyed listening to his music and seeing his old Cadillacs at the country music hall of fame in Nashville. Memphis felt small to me, and is known to have high crime areas, but we had no issues.

Yes Memphis City bus tour has an option to ride on the River boat along with seeing Sun Studios, Peabody and the Lorraine Motel where MLK was assassinated.
How are the crowds and live music during the weekdays currently? I would like to do a Monday - Wednesday visit this month. Is there stuff to do during the day?

Yes, you can walk through Beale Street. There are a few shops, bars, & restaurants. The live music usually doesn't start till late afternoon or evening.
